Ingredients:

300 gr of salmon

One spring onion

One Granny Smith Apple

½ bulb fennelIMG_1964

Mango vinegar

4 teaspoons of olive oil

Chopped chives and coriander

2 teaspoons of mayonnaise

Cooking instructions

Cut the salmon into small cubes (you can put in the freezer for ten minutes to help with the cutting)

Dice the onion, the fennel and the apple.

Add to the salmon and mix with the chopped herbs.

Add the mayonnaise and finish with the mango vinegar according to your taste. Season with salt and pepper.

Serve in small verrines as an apero or in larger servings for a starter.
