Another wonderful Provence recipe from Claudia’s Kitchen to take us into Autumn

Goats cheese and fig purse

For the purse you need:

2 sheets of filo pastry

1 small goats cheese

1 fig

1 teaspoon lavender honey

thyme

pepper

chives

Preparation:

Overlap the two sheets of pastry .

Drop in the centre of the pastry, half of the fig, skin side down, place the goat’s cheese on top

Sprinkle with pepper and thyme, and drizzle on a spoonful of honey lavender.

Place the other side of the fig on top

Close the purse and tie shut with chives.

Bake at 180 degrees for 20 minute or until golden.

This dish can be served as an appetizer or, in place of cheese, with a side salad.

    As we are going to stay in the Luberon in July I was interested in many items on your website and took down some recipes so that I can shop and cook some of Claudia’s lovely recipes. I usually take Elizabeth David but I think Claudia will come this year!
    I would be interested to find out about restaurants in Bonnieux and nearby. Things have changed since I was first there in 1990 and I haven’t been for 2 years but some nice restaurants have gone sadly and Cucuron now seems to have high profile restaurants – it always was a special lace round the e’tang.
