500 gr of white beans

500 gr of red beans

500 gr of flat green beans (écheleurs)

500 gr of green beans

4 potatoes

2 courgettes

3 litres of water

1 sausage

1 large tomato

1 bouquet of basil, 5 garlic cloves, 2 spoonfuls of olive oil, 150 gr of grated parmesan


Shell the beans, cut the courgettes and green beans into small chunks.soup au pistou

Put all the vegetables in a large pot apart from the potatoes, add three litres of water, salt and pepper, the whole tomato and sausage

Cook for 45 minutes so that the beans are cooked through then add the potatoes cut into small chunks, and cook for another 15 minutes.

In a mortar crush the basil and the garlic, then add the tomato and the sausage and crush as well, then add the olive oil and the parmesan, season with salt and pepper

Add the preparation into the boiling water

Wait until the soup reboils.

The soup can be eaten hot or cold even as an amuse bouche on a small soup spoon.
