For those who don’t speak French here’s a translation of the salient points of the cooking method:
Remove the Cote from the fridge half an hour in advance.
Generously add salt and pepper to both sides.
Brown in the pan. Before cooking in a hot oven.
Cooking time depends on size of the Cote. Approx 8 to 15 mins. Remove from oven and rest for the same amount of time as the cooking time.
Fry the shallots in the same pan used for the beef – add beef stock, and a glass of red wine. Reduce.
